1 1/2 cups uncooked white rice
3/4 cup cold water
1 tablespoon dried cranberry sauce
1 cup chopped onion
1 cup yellow squash, stalked
1 cup chopped celery
1 cup fresh, sour cream-flavored soft drink mix
1 (12 fluid ounce) can vegetable oil
1 (10 ounce) package frozen chopped spinach, thawed
1 (8 ounce) package frozen strawberries, sliced
1/4 cup hot milk
In a medium saucepan bring water to a boil. Reduce heat, cover and let simmer for 15 minutes.
Place rice in a large bowl. In a separate bowl, mix the cranberry sauce, onion, yellow squash, celery and green beans. Mix together.
Layer rice, cream of celery mixture, onion, squash, celery mixture and chicken. Stir chicken into rice mixture. Pour in sour cream. Stir in spinach and strawberries. Finally, stir in milk. Heat through
