Florentine Cheese Recipe

Ingredients

1/2 cup butter, softened

1/2 cup finely chopped onion

3 cloves garlic, minced

1 (2 ounce) can tomato paste

1 (16 ounce) package low-fat cream cheese, softened

1 (12 ounce) package frozen chopped spinach, thawed

1 (8 ounce) package cream cheese, softened

2 tablespoons grated Parmesan cheese

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium saucepan, cook butter, onion, garlic and tomato paste over medium heat for about 15 minutes, stirring occasionally.

Remove from heat and stir in cream cheese and cheese. Mix well and pour mixture over pasta.

Bake uncovered in preheated oven for 20 minutes. While pasta is baking, layer cream cheese and remaining cheese over the top of the pasta.

Turn pasta out and sprinkle with Parmesan cheese. Bake for about 5 minutes, or until cheese is melted and the cheese is bubbly.

This is a great way to use up those hard little noodles from pasta. It is great on it's own, spooned into bowls with a spoon of chopped up veggies, or cooked alongside rice. The flavors are perfect, and I always add some garlic and a little bit of lemon juice to mine. I usually just add the veggies and water, but this is such an easy and quick way to use up those noodles, I don't even bother with the sauce. Thank you for this idea!
