1/2 cup butter, softened
1 cup white sugar
1 egg
2 egg yolks
1 1/4 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons ground ginger
1 cup rolled oats
Preheat the oven to 375 degrees F (190 degrees C).
In a medium bowl, cream together the butter, sugar, egg, egg yolks, vanilla extract, flour, baking powder, baking soda and salt. Beat in the ginger, oats and salt. Mix thoroughly. Drop cookie by teaspoonfuls onto ungreased cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, or until lightly browned. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
