1 onion, chopped
8 stalks celery, chopped
2 tablespoons tomato paste
1 cup water
1 teaspoon salt
1 teaspoon crushed red pepper
1/2 teaspoon dried oregano
4 tomatoes, peeled and quartered
1 small yellow onion, chopped
2 tablespoons red wine vinegar
1 tablespoon chopped fresh ginger root
1 tablespoon white sugar
1 teaspoon dried oregano
In a large pot over medium heat, stir together onion, celery, tomato paste, 1 cup water, salt and crushed red pepper. Bring to a boil and reduce heat. Cover, remove from heat and stir in vinegar, ginger, sugar and oregano. Stir into chili mixture zing everything together.
