4 green onions, sliced
3 cloves garlic, minced
1 can sliced mushrooms
1 (8 ounce) can sliced tomatoes
1 (8 ounce) can marinated green chile peppers, drained
1 (4 ounce) can whole green chile peppers, sliced
1 (10 ounce) package frozen mixed vegetables or to desired size
1 cup shredded Cheddar cheese
2 cups salsa
1 tablespoon sunflower seeds
In a blender or food processor, pulse the green onions and garlic in water until smooth. Remove from blender, and slice.
In a medium saucepan, melt margarine over medium heat. Using a 2 ounce spoon, mix together the mushrooms and tomatoes. Stir in the tomatoes, green chile peppers, whole green chiles, salsa, and sunflower seeds. Pour over taco.
