1 pound cooked jumbo mozzarella sausage
1 handful Italian-style chopped onion
2 teaspoons dried oregano
1 tablespoon salt, or to taste
3 tablespoons sage, divided
1 tablespoon dried parsley, divided
Preheat oven to 375 degrees F (190 degrees C).
Preheat the oven to 350 degrees F (175 degrees C).
Remove sausage from the pan, reserving the grease for another round. Place the sausage casing side up in a large bowl. Stir in onion, oregano, salt, sage and parsley flakes.
Slice a third of the sausage into 1/2 inch pieces. Coat sausage in remaining pepper scent and set aside.
Arrange sausage in a lightly greased 9x13 inch baking dish. Sprinkle half of pepper sauce over sausage. Roll sausage into 1/2 inch rolls.
Bake 15 minutes in the preheated oven, until well done. Serve warm.
