8 ounces extra virgin olive oil
1 1/2 cups uncooked instant rice
1 tablespoon white sugar
1 teaspoon salt
1 lime, juiced,
In a saucepan, heat oil over medium heat. Stir in rice. Bring to a boil, stirring constantly, or just until rice is slightly translucent. Reduce heat to low and simmer for 5 minutes. Stir in sugar, salt, and lime juice. Bring to a low simmer and stir in lime zest.
Return to a boil and remove from heat. Stirring constantly, pour in olive oil mixture. Cover, and let stand for 1 to 2 hours.
I give it 5 stars, absolutely loved this bread. It was so easy to make and I felt quite accomplished. :)
made pretty and pretty spicy but we still wouldn't change a thing. If I went by taste I would say that this dish is closer to a balsamic vegrette dish than a rice one and it would make a great pot luck dish. Kids love it and not to mention the spices. Great!!
