Breakfast Sandwich Recipe

Ingredients

1 egg

1 tablespoon vegetable oil

1 1/2 cups sliced Swiss cheese

1 tablespoon prepared horseradish mustard

1 1/2 cups cooked Italian sausage

1 pound large eggs, beaten

salt and pepper to taste

1 (4 ounce) can sliced water chestnuts, drained

1 (8 ounce) can sliced mushrooms

1 cup shredded Swiss cheese

Directions

Preheat oven to 350 degrees F (175 degrees C).

Place egg in a medium bowl and whisk in oil, cheese, horseradish, Italian sausage, water chestnuts, mushrooms, Swiss cheese and salt and pepper to taste. Split remaining sandwiches.

Place sandwiches in lightly greased 9x13

What a simple, and delightful new way to eat poached eggs! You wouldn't think the addition of a bit of lemon juice and olive oil would make that big of a difference, but it really did! There was a nice brightness added to it, too. Pretty and tasty.
