1 cup quinoa
1 (16 ounce) can cream-style corn
1 (16 ounce) can pumpkin
1 (4 ounce) can sliced mushrooms, drained
1 cup sliced celery
1/4 cup chopped green onions
1/8 teaspoon garlic powder
salt and pepper to taste
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix quinoa, cream-style corn, pumpkin, mushrooms, celery, green onions, garlic powder, salt, and pepper. Mix until well blended. Transfer mixture to a 9x13 inch baking dish.
Bake in preheated oven for 45 to 50 minutes, or until bubbly.
