1 cup extra virgin olive oil
1 cup white wine
2 pounds beef brisket
1 onion, minced
1 green bell pepper, minced
1 medium onion, minced
1 (10 ounce) can tomato paste
4 ounces shredded mozzarella cheese
In a medium saucepan bring olive oil to a boil. Reduce heat, and simmer until liquid is reduced by about half. Add wine, beef and onion; quenching slightly. Stir in tomato paste. Reduce heat, and stir in mozzarella cheese. Bring to a simmer, stirring occasionally, for 5 to 6 minutes.
Stir in olive oil and tomato paste. Heat about 2 minutes, or until thickened and cooked through. Remove from heat. Stir in cheese. Serve immediately.
