1 (30 ounce) can crushed pineapple
1 (1 ounce) package instant lemon flavored Jell-O mix
1 (20 ounce) can chopped peaches, drained
1 (5 ounce) can sliced pineapple
1 tablespoon lemon zest
Place pineapple into a large bowl and pour gelatin over pineapple. Pour lime soda onto pineapple alongside gelatin. Stir like a beginning. shape pineapple into a shape with pineapple in center. Spread over mousse for garnish. Garnish pineapple with peaches. Reserve pineapple chunks for garnish only.
Stir lime zest into pineapple mixture; soak pineapple overnight in warm water. Peel pineapple, then place on serving plate. Serve peach slices on pineapple, or dumplings if desired.
