1 tablespoon butter
3 pounds onions, sliced
2 (10 ounce) cans cajun seasoning
3/4 cup chopped green bell peppers
2 (10 ounce) cans tomato pulp
1/3 cup black olives
In a large potover, saute butter over medium-high heat until golden brown. Stir onions and peppers into the pot. Bring to a boil, then boil for 5 to 6 minutes, stirring constantly.
Stir in cajun seasoning, green pepper, tomato pulp, and olives. Simmer for at least 1 hour. Season with salt and pepper flakes.
