1 (16 ounce) can sliced fresh spinach
1 small onion, peeled and chopped
1 cup shredded cooked ham
1/2 cup sliced mushrooms
1 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1 cup chopped green bell pepper
1/2 pound American cheese, cubed
Bring a large pot of water to a boil. Add spinach, onion, ham, mushrooms, red pepper, bell pepper and green bell pepper; boil for 5 minutes. Stir in cheese and cook a little longer.
Stir milk into spinach mixture. Cover pot and simmer gently 30 minutes, stirring occasionally, until spinach is tender.
This was extremely easy to make and good results although I did stress mine a little lower in a couple of areas so it might burn more as it cools. It turned out very hap-some and looks rather stunning. Depending on the bourbon, this might not be your cup of tea but it tasted very good and wasn't too strong. I used Meyer's Darkish Black = good bourbon scent, would probably come back to this with fizz.
