1 cup butter, softened
1/2 cup packed light brown sugar
1 1/2 cups white sugar
3 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup fresh ginger beer
Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets.
In a large bowl, cream together the butter and brown sugar until smooth. Beat in the white sugar, eggs and vanilla until blended. Stir in the flour, baking powder and baking soda; then mix with the ginger beer. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
