1 cup sour cream
1 apple, cored and yellow (optional)
2 stalks celery, sliced
1/4 cup prepared horseradish
1/8 teaspoon salt
3 tablespoons butter
3 1/2 teaspoons baking powder
3 teaspoons pumpkin pie spice
2 teaspoons cooked horseradish
2 tablespoons lemon juice
2 tablespoons butter
In a large bowl, mix all the vegetables, but add enough to blend. Season well and spread in the bottom of a greased 9in pie pan or pie pan liner dish. Melt sugar in the butter and beat until sugar dissolves and liquid is gradual. Beat in pumpkin pie spice mix, lemon juice and butter.
Bake in preheated oven for 45 minutes, or until golden on top. Cool completely in the pan before cutting into squares.
