Synthetic flavor is very slight and mainly gives off a pleasant coffee flavor. It is stable at 350-355F (the freezing point being 3°) during baking so it is ideal to keep in the refrigerator during mid-coffee/coffee flavor development. Monitoring stability helps a ton.
