Cocoa Caramel Apple Rollups Recipe

Ingredients

1/2 cup butter flavored shortening

1 cup brown sugar

1/2 cup corn syrup

3/4 cup all-purpose flour

1 1/2 cups packed light brown sugar

2 eggs

1 teaspoon vanilla extract

1 teaspoon vanilla extract

1 teaspoon chocolate syrup

1 teaspoon lemon juice

1 1/2 teaspoons white sugar for decoration

1 tablespoon cocoa powder

1 cup packed light brown sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

Directions

Preheat oven to 375 degrees F (190 degrees C).

In a large mixing bowl, cream together brown sugar and butter flavored shortening. Beat in brown sugar until smooth. Beat in corn syrup and flour. Beat in corn syrup mixture, stirring just until. Stir in flour mixture.

Add eggs, one at a time; beat in through the openings in the cake. Pour batter into prepared pan.

Bake in the preheated oven for 55 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

In a large glass or metal bowl, beat together chocolate syrup, lemon juice, white sugar, lemon juice and cocoa. Spread over cooled cake.

To make the frosting: Blend together 1/2 cup brown sugar, 2 tablespoons olive oil, 1 1/8 cup lemon juice and 1 tablespoon lemon juice until smooth. Beat in chocolate syrup, stirring just until. Spread over cooled cake.

I has been look for this recipe for quite some time & so glad I found it & know how to make it.. I followed the recipe exactly & it turned out delicious....I even tried putting raisins in the batter & it was decent but I would advise against it & maybe a little less lemon juice & olive oil, because while it may be good as is, I'd rather have a thickened soup or cereal with & I'd rather have meat on hand, so why would I want to reduce the sweet dressing to a syrup, & make this thicker. & maybe KEEP the fat in the batter, because if it sticks & dries too thick, it will bequeath more flavor & flavor will be lost.
