1 tablespoon vegetable oil
1 cup uncooked white rice
1 onion, sliced
2 (6 ounce) cans sliced mushrooms
salt and pepper to taste
1 (10 ounce) package frozen mixed vegetables
8 ounces shredded Cheddar cheese
Heat the vegetable oil in a large nonstick skillet over a medium heat. Saute rice and saute until golden. Reduce heat to medium-low, add onions and mushrooms and saute until golden.
Stir rice, mixed vegetables and cheese into skillet and cook over medium heat until vegetables are tender. Drain and stir in the melted cheese. Cook, stirring, until cheese is melted.
