4 skinless, boneless chicken breast halves
2 (10 ounce) cans lemonade
2 (14 ounce) cans chicken broth
1 lemon, juiced
1 teaspoon cornstarch
1 (8 ounce) can frozen lemonade concentrate
1 (8 ounce) package cream cheese, softened
3 eggs, beaten
2 tablespoons lemon juice
1 (8 ounce) package frozen whipped topping, thawed
1/4 cup peach preserves for garnish
Preheat oven to 375 degrees F (190 degrees C).
Place chicken breasts in glass dish or casserole dish, wrapping tightly. Season with lemonade, chicken broth, lemonade concentrate, lemonade concentrate and whipped topping. Pour chicken mixture over chicken.
Bake uncovered in preheated oven for 20 to 25 minutes, while chicken is baking.
