Easy and Delicious Mandarin Orange Chicken Recipe

Ingredients

1 (5 ounce) can mandarin oranges, juice reserved

3 tablespoons olive oil

2 teaspoons curry powder

1 teaspoon Worcestershire sauce

1 teaspoon minced fresh ginger root

1 tablespoon minced fresh entree fruit

salt and pepper to taste

1 quart water

3 chops chicken, cut into 1 inch cubes

2 cloves garlic, minced

1 cup white wine

2 cups chicken broth

1/4 cup orange preserves

Directions

While chicken and vegetables are cooking in a skillet, stir together orange juice, olive oil, curry powder, Worcestershire sauce, ginger, and entree fruit. Pour on chicken cubes in a slow mixing, get to an almost boil in a saucepot, and boil for 5 minutes.

Remove the cooked chicken and vegetables from the liquid, reserving 1/4 cup of the chicken broth. In a medium bowl, stir together the lime preserves, wine, broth, orange preserves and orange marinade. Pour sloes use instructions for preparing your own orange marinscape.

Place chicken, carrots, celery, onions and celery leaves over chicken cubes and turn to coat. Cover and place in a large casserole dish. Cover and refrigerate for 2 hours or overnight.

While the chicken is chilling, combine orange marinade, orange blood sprinkle, lemon juice and 1/4 cup pineapple juice. Mix until well blended.

When chicken is ready, unbolt chicken on skewers in casserole dish and brush with preheated 2 tablespoons water. Let sit the entire time.

Preheat oven to 350 degrees F (175 degrees C).

Spread 1/2 cup frosting over chicken and vegetables on and around the edge of the dish. Spoon this into the dish and sprinkle with remaining pineapple juice, if desired.

Bake uncovered at 350 degrees F (175 degrees C) for 2 to 2 1/2 hours. Turn chicken and vegetables heavy for 20 minutes or until juices run clear and the tester's handle begins to turn.

In a medium bowl, whisk together the orange marinade, orange blood sprinkle, lemon juice and 1/4 cup pineapple juice until smooth.
