1 cup water
1/2 cup olive oil
3 tablespoons Italian-style seasoning
1 onion, thinly sliced
1 green bell pepper, thinly sliced
1 carrot, cut into 1-inch cubes
1 1/2 cups diced celery
1/2 cup chopped onion
1 tablespoon chopped fresh parsley
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried basil
1 teaspoon dried rosemary
1 teaspoon dried thyme
salt and pepper to taste
1 (16 ounce) package frozen rainbow crackers, thawed and cooked
Heat 1 cup water in a large saucepan over medium heat. Stir in olive oil, then add Italian-style seasoning. Saute until the seasoning is thoroughly dispersed, about 5 minutes. Reduce heat to medium-low; cook about 5 minutes per side, stirring constantly. Pour in Italian-style seasoning mixture, onion and bell pepper; transfer to a large serving bowl.
Stir in celery, red bell pepper, carrot, onion and parsley.
Stir in oregano, basil, rosemary, thyme and salt and pepper. Fold into cracker mixture.
