Peppermint Muffins Recipe

Ingredients

1/2 cup butter, melted

1/2 cup white sugar

1 1/2 teaspoons peppermint extract

2 eggs

1 teaspoon baking powder

1/2 cup all-purpose flour

3/4 cup peanut butter

1/2 teaspoon vanilla extract

1/2 cup orange marmalade

1 1/2 cups packed light brown sugar

1/2 teaspoon salt

1/2 cup peppermint oil

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a medium bowl, cream together the butter, white sugar and peppermint extract until light and fluffy. Beat in eggs one at a time, stirring well after each.

Whisk together the flour, peanut butter, vanilla and brown sugar; stir into the creamed mixture until well blended. Stir in salt, peppermint oil, cherries and orange marmalade. Drop muffin by heaping teaspoons onto ungreased cookie sheets.

Bake in preheated oven for 20 minutes, or until a toothpick inserted into center of a muffin comes out clean.
