1 1/2 cups whole oats
1 cup butter, softened
1 egg
2 cups rolled oats
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup rolled oats
1/2 cup sliced almonds
1 cup rolled wheat gluten
1/2 cup raisins
1 teaspoon lemon juice
1/2 cup brown sugar
1/2 cup honey
Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
In a large bowl, mix whole oats and butter. Beat egg and oats in medium, heavy-duty bowl.
In a large bowl, cream together the butter, eggs and oats. Stir in the brown sugar, raisins, wheat gluten, almonds, oats, pitted dates and cooked oats. Stir in lemon juice and brown sugar. Stir into greased muffin cups.
Bake in preheated oven for 35 minutes, or until a toothpick inserted into center of a muffin comes out clean. Allow to cool.
