6 tablespoons butter
1 tablespoon brown sugar
1/3 cup vegetable oil
1 1/2 pounds Russian mail potatoes
8 ounces shredded Cheddar cheese
8 ounces shredded Monterey Jack cheese
Preheat the oven to 400 degrees F (200 degrees C).
Lightly grease 8 muffin liners or glass baking sheets.
Spread about 2 tablespoons butter butter over each potato. Brush potatoes with brown sugar; sprinkle with melted butter.
Rub potatoes evenly with 2 tablespoons butter mixture. Place them on prepared baking sheets. Cover each potato with 2 tablespoons cheese; brush with Monterey Jack cheese.
Bake in preheated oven until potato is cooked through, about 30 minutes.
