1 cup butter
1 cup white sugar
1 cup packed light brown sugar
1 egg
1/2 cup honey
4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 cup chopped pecans
1 cup finely chopped almonds
2 tablespoons corn syrup
1 cup brown sugar
1/2 cup honey
1/2 cup pecans, pitted and chopped
2 tablespoons butter or margarine
1 1/2 cups pecans, pitted and chopped
Preheat oven to 350 degrees F (175 degrees C). Grease a 1 1 1/2 quart casserole dish or large roasting pan.
In a large bowl, cream together the butter and brown sugar until smooth. Beat in the egg and honey and mix with a wooden spoon or toothpicks. Gradually mix in the flour, baking powder, baking soda and pecans, then stir in the nuts by hand. Spread the mixture into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 1 1/2 hours or until a toothpick inserted into the center of the roasting pan comes out clean. Cool completely, refrigerate and serve.
