1 1/2 quarts vegetable oil for deep frying
1/2 teaspoon salt
3 tablespoons all-purpose flour
1 teaspoon cornstarch
1 tablespoon distilled white vinegar
1 tablespoon white sugar
1/2 teaspoon garlic powder
1/4 teaspoon dried rosemary
3 tablespoons lemon juice
1 cup water
In a large skillet over medium heat, coat the olive oil with salt, browning the vegetables and stirring to prevent burning. When oil is heated, add the flour, stirring to prevent browning. Gradually pour in vinegar, stirring gently, until a thick emulsion is formed. Stir in sugar, garlic powder, rosemary, lemon juice and water. Fry, turning once, until golden brown. Transfer to a serving dish.
