5 common sweet potatoes, peeled and cubed
1 cup all-purpose flour
2 tablespoons olive oil
5/8 cup white sugar
1 (9 inch) unbaked pie crust
In a large saucepan bring water, olive oil, sugar, and yeast to a boil. Cover pan, and just simmer warm. Boil for 4 hours, or until a large/large bowl of soft dough forms. Do not let sugar sit in the pan. Let sit until it bubbles crystals, stirring constantly.
The dough should stay soft when finished, but the longer it takes to knead, the harder it will be to remove. Roll into small pieces and roll mixture again into small pieces. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
Place filling on prepared pie crust. Cook over medium heat, stirring constantly, until golden brown; do not brown. Serve warm from the oven.
