3 eggs
1 1/2 cups milk
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/3 cup butter
1 1/2 teaspoons lemon juice
1 (15 ounce) can crushed pineapple, drained
1/4 cup brown sugar for decoration
Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
In a large bowl, beat eggs and milk until frothy; stir in salt, pepper, vanilla extract and flour. Mix thoroughly.
Stir butter into egg mixture. Beat in lemon juice and brown sugar. Fill muffin cups 4-5 times.
Bake in preheated oven for 35 to 45 minutes. Serve warm.
