3 Pound chuck roast

Ingredients

I submitted this recipe many years ago to several relatives and they always ask for this recipe. Recently I have been thinking about it but haven't had the recipe to test it on.

I made this with a pork butt roast, and it was delicious. There are two ways to make an omelet: you can add Swiss or Italian cheese to it, or you can leave it out and use the leftover ham or bacon. I liked the combination of cheeses, but it would have been better without them. Next time I might add some bacon to it--I roasted a bacon and was curious about the flavor.

This is a great way to use those hard little potatoes from the garden. It turned out pretty good, even without the cream cheese. I put mine in a casserole dish, on a sheet of french bread, and broiled it for about five minutes. It melted the butter at the end, so that was a nice addition. Anyway, so glad I made this. Next time, I might put some cheese in the bottom, for a little more flavor.
