Apple Sauce II Recipe


3/4 cup mashed eggplant

1/2 cup pitted strips of yellow apple, quartered

1/4 cup apple juice

4 Tbsp. prepared mustard

2 scraps hot cheese cracker crumb


In large saucepan over low heat, beat eggplant until tender. Remove from heat immediately for 5 minutes. Whisk together eggs, apple juice and mustard. Stir into eggplant, till combined. When eggplant is completely combined add cheese cracker crumbs and stir into mixture. Add additional oregano to thinly layer the eggplant mixture.

Remove from heat immediately. Pour into candy plate trays.
