Squash and Beet Soup II Recipe

Ingredients

3 pounds peeled and diced onion

1 cup peeled and diced garlic

1 teaspoon salt

1/3 cup oil

1/3 cup milk

1 small onion, chopped

1 clove garlic, minced

1 tablespoon vinegar

1 teaspoon lemon juice

1 tablespoon chile powder

1 cup shredded mozzarella cheese

1/2 cup cooked and diced turkey sausage

1 (10 ounce) can crushed tomatoes with black olives

1/2 cup Italian seasoning

1 cup chopped celery

1 tablespoon chopped fresh parsley

Directions

In a large pot over medium heat, combine onion and garlic. Saute until onion is translucent, about 10 minutes.

Add oil, milk, onion, garlic, vinegar, lemon juice, chile powder, mozzarella cheese, turkey sausage and tomatoes with black olives. Simmer for 45 minutes or until cheese is melted. Remove from heat, stir, use a slotted spoon to loosen mixture from pot. Serve at room temperature.
