1 cup water
1 cup white sugar
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1 cup milk
1 egg
1 teaspoon vanilla extract
2 cups canned sweetened coconut milk
1/2 cup butter
1 cup chopped almonds
Bring water and sugar to a boil in a medium saucepan. Reduce heat to medium, and add flour and baking powder; stir. Bring to a boil. Cook, stirring constantly, for 3 minutes. Remove from heat; stir in milk and egg. Stir in coconut milk and butter. Stir until mixture is thickened. Remove from heat; stir in chopped almonds. Pour mixture into 2-quart saucepan. Cover tightly loosely with foil or plastic wrap. Cover tightly with aluminum foil or plastic wrap; cool.
