1 (9 inch) pan pie crust
2 eggs, beaten
2 quarts milk
1 cup brown sugar
1 (14 ounce) can black eyed peas
1 (3.5 ounce) package instant vanilla pudding mix
1/2 cup orange juice
1 (14 ounce) can crushed pineapple with juice
Preheat oven to 375 degrees F (190 degrees C).
In a large bowl, beat eggs and milk together until smooth. Beat in brown sugar, then stir in pudding mix. Mix well. Fold in orange juice and pineapple juice. Pour batter into prepared pie crust.
Bake in the preheated oven for 2 hours, or until a toothpick inserted into the center of the pie comes out clean. Allow to cool completely before serving.
I tried this out for a Christmas party and it worked. I could see it being useful.
I'm not a big fan of Pisco Sours but my husband loves them. This was so good and he asked for them again! I would definetly make it again.
