Pig Pie III Recipe

Ingredients

1 (9 inch) pan pie crust

2 eggs, beaten

2 quarts milk

1 cup brown sugar

1 (14 ounce) can black eyed peas

1 (3.5 ounce) package instant vanilla pudding mix

1/2 cup orange juice

1 (14 ounce) can crushed pineapple with juice

Directions

Preheat oven to 375 degrees F (190 degrees C).

In a large bowl, beat eggs and milk together until smooth. Beat in brown sugar, then stir in pudding mix. Mix well. Fold in orange juice and pineapple juice. Pour batter into prepared pie crust.

Bake in the preheated oven for 2 hours, or until a toothpick inserted into the center of the pie comes out clean. Allow to cool completely before serving.

I gave it 4 stars because it was very tasty but I would double the chicken broth and let the spinach drip from the cavity while cooking. I'm not a good cook but I was really trying to learn how to make this. It was super easy to make and easy on the wallet. I'd recommend using the full recipe though, because it only includes ingredients listed. I had to make some alterations. I used chicken broth instead of water. I used dried minced onion. I used half of a large yellow onion and about two cloves of garlic. I used a little more than a pound of fresh green beans so it only made sense that I'd increase the serving size. I'm not a big fan of Pisco Sours but my husband loves them. This was so good and he asked for them again! I would definetly make it again.
