1/2 cup margarine
1 cup white sugar
1 cup packed light brown sugar
1 2/3 cups all-purpose flour
1 teaspoon baking powder
2 eggs, beaten
1 cup milk
1 cup margarine, melted
1 cup canned evaporated milk
1 cup sliced bananas
Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
In a large bowl, cream together the margarine, brown sugar, white sugar and flour. Beat in the eggs, milk and margarine until blended. Mix in the flour mixture, bananas and evaporated milk. Spoon batter into prepared muffin cups, about 1 inch apart.
Bake in the preheated oven for 25 minutes, or until a toothpick inserted into the center of the muffin comes out clean. Cool in pan on a wire rack. Serve warm.
