Grandma's Roast Beef Recipe

Ingredients

1 (4 ounce) can sliced mushrooms, drained

1 (10 ounce) package beef tenderloin

1 cup chopped onion

1/2 cup chopped celery

1 cup chopped green bell pepper

4 cups sliced pepperoni

6 slices bacon

1 1/2 slices onion

1 cup shredded mozzarella cheese

1 cup shredded Italian cheese blend

1 cup packed brown sugar

1 cup sliced whole pepper

1 cup sliced Swiss cheese

Directions

Preheat oven to 350 degrees F (175 degrees C).

In a large, nonstick skillet, heat mushrooms and onion and saute over medium heat until soft. Remove from heat and stir in celery, green pepper, pepperoni, bacon, onion, mozzarella cheese and Italian cheese blend. Mix until well coated.

Arrange slices of pepperoni and bacon on a medium baking sheet. Spread mushroom mixture on top of pepperoni and bacon. Arrange pepperoni mixture along bottom of pepperoni and bacon. Spread mushroom mixture on top of pepperoni and bacon. Place foil on pan to prevent sticking.

Bake in preheated oven for about 20 minutes, or until pepperoni and bacon are just cooked through.

Meanwhile, heat butter and brown sugar in a large skillet over medium heat. Stir until butter melts; remove from heat. Stir in brown sugar and pepperoni and cook for 1 minute. Pour mixture over pepperoni and bacon in pan. Sprinkle mushrooms over top of pepperoni and bacon.

Bake for 45 to 50 minutes in the preheated oven, or until bacon is just tender. Top with mushrooms, mushrooms and mushroom mixture. Sprinkle with cheese and brown sugar.

I followed the recipe exactly making no changes and these were incredible! My husband complained when they were all gone. My only warning would be to be careful when grilling over high heat, some of ours were burned, however my husband still inhaled his.

The beef isn't bad but I think adding vegetables would have been better. Other than that, I love this recipe! :)

Made this again verbatim from a recipe I saw at a farmers' market. It is a bit different - a touch of salt instead of white pepper. Lovely texture and great flavor. The salt bit especially. changed it to taste. By the way, golden, gooey goodness. Love this recipe!
