1 medium jalapeno pepper, seeded and minced
1/2 cup butter, melted
3 tablespoons olive oil
3 slices dark bacon
Heat butter in a medium bowl.
Trail peppers in warm oil until brown, drain and cut into 4 wedges. Place stems and ends into a Mexican style candy baking dish.
Bake warm jalapenos at 350 degrees F (175 degrees C).
Sprinkle the bacon over the tops of jalapenos. Roll squares of bacon into 4 equal patties.
Pour hot butter/oil mixture into the pan, then brown the edges of pan in the skillet, it is important to do this quickly, the bacon edges will probably give them a bluish tint. Serve over the jalapenos and tomatoes.
