12 sweet potatoes, peel and cut into 1 inch pieces
2 small red onions, halved
1 large carrot; cut into 1 inch pieces
8 slices white bread, sliced into strips
Place the tomatoes and onions in a zester. Place the tomato halves atop the tomatoes and onion, keeping the skin open. Gently cut tops off of tomatoes and onions using a sharp knife.
Place pita bread slices on top of tomatoes and onions. Sprinkle with the Cheddar cheese.
Broil for 1 to 2 minutes, flipping the peel and cutting each tomato half into thin slices on each side. Cover tightly with aluminum foil, and keep warm.
