3 tablespoons olive oil, divided
2 cloves garlic, peeled and minced
1 large onion, diced
1 foot whole egg
1 tablespoon salt
1 pint shredded Cheddar cheese
In a large skillet over medium high heat, heat 2 tablespoons olive oil and add 1 teaspoon garlic, onion and egg. Saute until light brown. Stir firmly and continue to cook until tender.
Place shredded cheese in the skillet, and cook until melted. Remove from heat, and sprinkle with 1 teaspoon salt. When cheese is melt, place warm sliced turkey on top. Drizzle with minced olive oil. Top with the mozzarella cheese.
Place stuffed turkey on top of casserole and brush with olive oil and cheese mixture. Bring to a slow boil and reduce heat to low. Simmer 90 minutes, adding more olive oil if necessary, stirring occasionally, until turkey is tender.
