2 eggs
1 tablespoon diced onion
1 tablespoon diced celery
1/4 teaspoon grated onion
1/4 teaspoon minced garlic
1 cup milk
1 pound shredded Monterey Jack cheese
Preheat oven to 250 degrees F (120 degrees C).
Heat oven to 350 degrees F (175 degrees C).
Place eggs in a large bowl. Mix milk, celery, onion and garlic; pour mixture into an electric food processor or blender. Blend briefly to incorporate. Transfer to shallow baking dish. Place cheese in baking dish. Place egg mixture over cheese.
Bake in preheated oven for about 20 minutes, or until cheese begins to brown and juices run clear.
