2 (3 ounce) packages ramen noodles
4 tablespoons vegetable oil
4 ounces frozen chopped spinach, thawed and drained
1 medium onion, finely chopped
1 large carrot, lightly chopped
2 green onions, finely chopped
2 stalks celery, finely chopped
1/8 cup honey
10 cups water
1 cup uncooked Ramen noodles
Bring a large pot of water to a boil. Add noodles and cook for 10 to 12 minutes, or until noodles are al dente; drain.
Meanwhile, in a large pot over medium heat, combine oil, spinach, onion, carrot, green onions, celery, honey and water. Bring to a boil, stirring occasionally, reduce heat to low, cover and simmer for 5 minutes. Stir in ramen noodles and cook for 10 to 12 more minutes. Sprinkle with cheese and serve immediately.
