1 (4 pound) whole chicken, skin removed, cut into pieces 1/2 inch thick
1 cup peeled tomato
1 teaspoon lemon juice
1 onion, chopped
1 tomato, diced
3 bay leaves
In a large skillet over medium heat, sautestick onion and tomato until tender. Add bay leaves (optional) to tomato mixture and simmer 1 minute. Serve simultaneously with soup or pasta.
