1/2 cup white sugar
4 eggs
1 teaspoon vanilla extract
3/4 cup cornflakes cereal
1/4 cup cherry juice
1/3 cup cocoa
2 tablespoons margarine
1/2 cup orange juice
1 teaspoon lemon juice
1 teaspoon lemon zest
Preheat the oven to 375 degrees F (190 degrees C).Line a cookie sheet with parchment paper about 2 inches apart.
In a large bowl mix the sugar, eggs, vanilla and one cup cornflakes. Stir in the cherries, orange juice, lemon juice and lemon zest. Drop remaining apples by 1/2 block into sugar mixture, swirling slightly with a wooden spoon. Place also into cookie sheet. Place these onto the parchment, about 1 ½ inch apart.
Bake for 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
