1 (17 ounce) package reduced fat cream cheese
1 (8 ounce) package cream cheese, softened
1 cup chopped celery
1 cup chopped onion
2 ripe tomatoes, diced
1 green bell pepper, diced
1/2 cup diced red bell pepper
1/3 cup minced fresh parsley
1/3 cup shredded mozzarella cheese
In a medium bowl, blend cream cheese, cream cheese and celery until well blended. Stir in onion and bell pepper to form a smooth, creamy cheese.
Dissolve cream cheese mixture in softened mayonnaise. Mix in tomato juice and pepper; pour over chicken mixture. Fold in parsley and mozzarella cheese. Serve with coleslaw.
