3 onions, sliced
4 oranges, peeled and sliced
1 teaspoon lemon juice
2 tablespoons distilled white vinegar
2 tablespoons garlic powder
2 teaspoons white sugar
1 tablespoon soy sauce
1 teaspoon salt
1 teaspoon white sugar
3/4 teaspoon tarragon
1 cup shredded Cheddar cheese
In a medium bowl, combine the onions, oranges, lemon juice and vinegar. Mix well, then stir fry onion or celery into the mixture.
Place the chicken, oranges and lemon juice mixture in a large bowl. Mix evenly with the vegetables. Cover and let the chicken wilt. Sprinkle chicken with the mustard, remove, and let stand for 5 minutes.
Dredge chicken in mustard mixture. Layer the salad with the chicken, oranges and lemon juice mixture. Sprinkle with cheese. Cover and chill at least 1 hour to marinate the chicken. Slice and serve.
