1 cup white sugar
2 teaspoons baking soda
1 cup vegetable oil
2 eggs
1 cup pumpkin puree
1 cup brown sugar
3/4 teaspoon salt
4 cups pumpkin
1 cup butter, softened
1 cup brown sugar
1/2 cup pumpkin pie spice
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix the sugar, baking soda, oil, eggs, pumpkin and brown sugar. Mix well, then pour mixture into the pan, spreading evenly.
Bake for 1 hour in the preheated oven. Let cool on a wire rack.
Beat butter and brown sugar with an electric mixer until fluffy, about 5 minutes; stir in pumpkin pie spice. Fold the pumpkin mixture into the chocolate mixture. Spread pumpkin mixture over the cookie.
Place cookie on an ungreased cookie sheet and allow to cool completely before frosting.
