Orange Ginger Pie Recipe

Ingredients

2 (9 inch) pie shells

1 1/2 cups chopped pecans

1/4 cup butter or margarine, melted

1 1/4 cups all-purpose flour

7 teaspoons orange juice

1/2 cup brown sugar

2 tablespoons lemon juice

1 teaspoon vanilla extract

1 cup orange juice

Directions

Preheat oven to 350 degrees F (175 degrees C).

Preheat oven to 350 degrees F (175 degrees C). Spray the bottom of a 9 inch ice-cream or custard pie pan with cooking spray, and place pan on a baking sheet to level with the sides of the crust. Spread pecans evenly over the interior of the pie shell.

In a large bowl, beat margarine, orange juice, brown sugar, lemon juice and vanilla until well blended. Beat in orange juice and orange juice. Pour mixture into pastry shell.

Bake at 350 degrees F (175 degrees C) for 12 hours or until pecans are golden brown. Cool and frost. Decorate with fruit of your choice.

I forgot to take a small pinch of cardamom powder, but other than that this recipe is good.
