1 cup butter, softened
2 eggs
2 tablespoons white sugar
2 (3 ounce) packages cake mix
2 Large ripe strawberries - peeled, cored and coarsely chopped
Preheat oven to 350 degrees F (175 degrees C).
Combine flour, butter and eggs in small bowl; beat to creamed mixture, beating constantly, until smooth. Stir in sugar and cake mix. Stir into creamed mixture. Spoon into 8 muffin cups.
Bake for 1 hour in the preheated oven, or until toothpick inserted into center comes out clean. Allow to cool completely before frosting.
To make chocolate frosting: In small bowl, beat whipped cream until stiff peaks form. Press 1 tablespoon of chocolate frosting into muffin cups; top with strawberry slices in the center. (Note: Frost with hot coffee, not ice.)
