Donna's Surprise Plum Pie Recipe

Ingredients

2 eggs, beaten

1/2 teaspoon vanilla extract

1 pinch salt

2 cups white sugar

2 tablespoons vegetable oil

1 1/2 cups all-purpose flour

1 cup sliced almonds

1/4 cup chopped pecans

2 tablespoons rum flavored beer

1 cup bitter orange juice

1 teaspoon lemon zest

1/4 cup fresh strawberries

Directions

Preheat oven to 450 degrees F (230 degrees C). Line pastry sheet with parchment paper.

Beat together eggs and vanilla with an electric mixer or any mixer bowl, scooping and mixing. Stir together sugar, oil, flour, almonds, pecans, rum beer, apples and plums with electric mixer to form a dough.

Shape dough into 2 pieces. Place pieces of dough on prepared pie plate.

Bake in preheated oven for 8 to 10 minutes or until light brown. Cool slightly and refrigerate. Slide in raisins and slice into desired shapes. Store in refrigerator overnight.

I tried this for my Easter dinner and already forgot to ask for the recipe. So I will try it again soon. This is really good and very easy to make. I am partial to the bright red tip, just not quite so much like the Perch. I also added Salt and Pepper. I bought the perch from a local fish store and it comes through very well. It is very flavorful and well balanced. I will make this time and time again.
