1 tablespoon vegetable oil
1 tablespoon sesame seeds
1 onion, thinly sliced
1 cup fresh chicken or vegetable broth
1 medium head cabbage, torn into rounds
salt and pepper to taste
2 cups water
1 (10 ounce) can diced tomatoes with green chile peppers
In a large saucepan, heat oil over medium heat. Add sesame seeds and saute for a few minutes.
Remove chicken from marinade, and fry in oil until golden brown. Drain, and cut in half lengthwise to get 3 different colors. Transfer chicken pieces to a large dish. Sprinkle with 1/2 of the green chile peppers, then top with 1/8 cup of shredded cabbage. Serves 4.
Remove chicken pieces and liquid from marinade. When liquid is dispensed, stir in tomatoes and stir to coat.
