1 cup white sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups pumpkin puree
1 1/2 cups cooked and diced beef
1 cup diced onion
1 cup cooked white sugar
1 teaspoon pumpkin pie spice
1/2 teaspoon salt
Preheat oven to 350 degrees F (175 degrees C). Lightly grease 9-inch square baking pan.
In a large bowl, beat egg white and sugar. Stir in pumpkin, beef, onion, sugar and pumpkin pie spice. Beat until blended. Pour mixture into prepared pan.
Bake in preheated oven for 50 minutes. Top with remaining ingredients. Bake for an additional 25 minutes.
Recipe creator here....my new favorite pie! I did use one 8" pie crust (from an old pie crust I made) and one I baked in a 9x13 pan. I didn't have to add any water at all, so that's probably why it was so damn creamy-y! I put the milk/egg mix in my stand mixer with the dough hook...I waited about a minute, then added the sugar, turning the dough over...it came out of my fridge smelling wonderful, and my oven was running at 400! Thanks so much for this wonderful recipe, it's the first time I've written a review for a recipe and it got me thinking, what other pie should I try? I couldn't find a pumpkin pie that I liked, so I made a new one! Oh, and I forgot to add the egg...
This pie was very good, I put butter in the mix instead of oil and I put pumpkin seeds in the middle instead of cinnamon. I don't know why people are complaining that it is dry. Let it cool about 45 minutes and it was great.
